Our Saperavi wine is a testament to the meticulous artistry and dedication that goes into crafting each bottle. Cultivated from specially selected Saperavi grapes, meticulously planted in our esteemed vineyards in Vachnadziani in 2015 and Shashiani in 2019, this exceptional wine embodies the essence of our unique terroir. Nestled at an elevation of approximately 400 meters above sea level, these two distinct vineyards offer a mix of different types of soils – the meadow brown of Shashiani and the alluvial, highly variegated alternating, and stony oils of Vachnadziani. These diverse elements converge to create a wine with intriguing taste properties and robust aromas, accompanied by an exquisite color extraction. The grapes, carefully hand-picked in the early morning of late September, undergo a gentle crushing before finding their home in stainless steel tanks. A 20-day maceration period follows, ensuring the perfect extraction of tannins and color. The wine is then delicately separated from the skins and moved into a new tank for malolactic fermentation.
